SMOKED SAUSAGE GUMBO
1 cup chicken or beef broth
1 carrot, chopped
1 cup green beans
1 can (14.5-oz) diced tomatoes
¼ cup all-purpose flour
1/8 teaspoon red pepper, ground/flake
2/4 cup Polish sausage (cut into pieces)
1 green onion, diced including stalks
1 green pepper, diced
2 teaspoons oregano
2 teaspoons thyme
1 cup wild or brown rice, cooked
- Combine broth, smoked sausage, beans, carrot, pepper, onion, and tomatoes in Crock Pot or Dutch oven. Stir.
- Add flour and seasoning, stir well.
- Cook on low heat for 6 to 8 hours. You can add shrimp to the mixture in the last 30 minutes of cooking.Serve on wild or brown rice.
