Smoked Sausage Gumbo

SMOKED SAUSAGE GUMBO

1 cup chicken or beef broth
1 carrot, chopped 
1 cup green beans
1 can (14.5-oz) diced tomatoes
¼ cup all-purpose flour
2 tablespoons olive oil
1/8 teaspoon red pepper, ground/flake
2/4 cup Polish sausage (cut into pieces)
1 green onion, diced including stalks
1 green pepper, diced
2 teaspoons oregano
2 teaspoons thyme
1 cup wild or brown rice, cooked

  1. Combine broth, smoked sausage, beans, carrot, pepper, onion, and tomatoes in Crock Pot or Dutch oven. Stir.
  2. Add flour and seasoning, stir well.
  3. Cook on low heat for 6 to 8 hours. You can add shrimp to the mixture in the last 30 minutes of cooking.
    Serve on wild or brown rice.
