Ham, Apple, Cheese Panini Sandwiches

This is a great quick meal for those summer days when you do not want to spend much time in the kitchen or for lunch or just for something different. The recipe serves 4.
INGREDIENTS:
6 tablespoons mayonnaise
¼ cup almonds, chopped fine
2 teaspoons tarragon 
ground black pepper to taste
8 slices rustic or rye bread (1/2-inch thick)
8 ounces sliced deli Black Forest ham
1 apple, cored, halved, and sliced thin
8 ounces Brie, Swiss, or Farmers Cheese
cast-iron bacon/burger press

  1. Combine mayo, almonds, tarragon, pepper in bowl. Spread mayonnaise mixture evenly on 4 slices bread. Arrange ham, apple slices and cheese in even layers over mayonnaise mixture. Top with remaining 4 bread slices.
  2. Heat 12-inch grill pan or skillet (if using skillet, grease with cook spray or olive oil film) and place on medium heat until hot, about 1 minute. Place 2 sandwiches in pan, cheese side down, and weigh down with heavy press. Cook sandwiches until golden brown and cheese is melted, about 5 minutes per side. Transfer to wire rack and repeat with 2 remaining sandwiches. Serve with pickle spears and potato chips.
