Grilled
Turkey Pitas with Cucumber Salad

cucumber, peeled, halved lengthwise, seeded and sliced thin

ounces feta cheese, crumpled (1 cup)
½
cup pitted black olives, chopped
¼
cup mayonnaise
4
scallions, white and green parts separated and sliced thin
Salt
and black pepper
Garlic,
powdered or flakes
1-1/2
pounds ground turkey

tablespoons chopped oregano

(8-inch) pita breads, halved
- Combine cucumber, 1/4-cup feta, olives, mayonnaise, and scallion greens in bowl. Season with salt and pepper to taste. Knead turkey, oregano, remaining ¾ cup feta, scallion whites, garlic to taste and ½ teaspoon black pepper together in second bowl. Shape turkey mixture into 4 (1/2-inch thick minimum) oval patties by hand or press and press shallow divot in center of each.
- Grill over medium-hot fire until burgers register 160-degrees, 5 to 7 minutes per side. Transfer to plate. Grill pita bread until warmed through about 30 seconds per side. Place one burger in each pita along with one-quarter of cucumber salad. Serve.
NOTE:
Making a divot in the center of each raw burger allows the burgers to
cook flat.
