Italian Roast Beef Panini
[Serves 4]
10 cloves
garlic
1 teaspoon
olive oil
¼ cup
mayonnaise
8 slices
Italian bread
8 ounces
roast beef
1 red onion,
sliced
6 ounces
roasted or sport peppers
2 Roma
tomatoes, sliced
4 slices
mozzarella cheese
Olive oil,
as needed
- Prepare roasted garlic by tossing peeled garlic cloves and sprinkle with olive oil and place on a piece of aluminum foil and fold closed. Place in preheated oven at 350-degrees and roast until tender, about 20 or 25 minutes. Transfer garlic to bowl and mash completely. Add mayonnaise and mix well until blended.
- Assemble each sandwich: spread 1 tablespoon of roasted garlic mixture on one slice of Italian bread. Top with roast beef slices and two slices of red onion, 1-1/2 ounce peppers, 2 slices tomato, one slice of cheese, and top slice of bread.
- Spread top and bottom of sandwich lightly with olive oil to coat bread. Place sandwich on heated panini grill. Cook on both sides until crust is browned and middle is heated.
Serve
with chips, pickle and/or salad.
